Santo Agave now open in Peoria

Santo Agave, a restaurant offering Mexican‑inspired dishes, is now open in Peoria at 9832 W. Northern Ave. in the Park West shopping center.

The restaurant is owned by longtime restaurateur Damian Rangel and features dishes influenced by regional Mexican cuisine in a setting designed to reflect elements of Mexico City and the Riviera Maya, according to a press release.

Mr. Rangel, who lives in Avondale, has worked in the restaurant industry for 26 years. He began his career on July 4, 2000, and has operated concepts with his family in Mexico and the United States across several southwestern states, including Arizona.

“People can get food anywhere,” Mr. Rangel said. “What they remember is how a place made them feel. At Santo Agave, the experience is personal, emotional, and welcoming. The kind of place where you can relax, stay awhile, and feel like it’s your spot.”

The concept emphasizes hospitality with a focus on extended dining experiences. Mr. Rangel said the goal is for guests to feel personally connected to staff and to the experience overall.

Tequila education is also part of the approach, including a curated tasting of three tequilas paired with chocolate to highlight differences in flavor and region.

The menu incorporates influences from across Mexico, including Sinaloa‑style seafood, Jalisco beef, Yucatán seasoning and dishes such as dry fideo noodle soup. Offerings range from raw bar selections and tacos to seafood, charcoal‑cooked steaks and premium ribeye tacos. Food is prepared using a Josper charcoal oven.

The beverage program includes wines from Mexico, Argentina and Chile, as well as selections from California and Napa Valley. Cocktail prices range from $14 to $22, and the restaurant offers tableside presentations for certain menu items.

Santo Agave features weekly dining specials, including a Tuesday offering with a prime porterhouse for two and a Monday option with bottomless sangria and small bites. Sunday happy hour includes agave‑based cocktails paired with oysters.

Design elements include a teak tree root installation from Indonesia, bamboo accents, basket‑woven pendant lights sourced from multiple countries and reclaimed wood tables. Earth tones and greenery are used throughout the space. Amenities include percheros for personal items and spaces for returning guests to store unfinished bottles.

The restaurant plans to introduce a membership program that will offer private storage, no‑reservation access and exclusive off‑menu experiences.
Santo Agave occupies a high‑visibility space near Harkins Theatres. It includes a patio with misters and shade, and garage doors that open to the outdoor area. DJs perform Latin house music from 7 to 11 p.m. Thursday through Saturday, with music curated to complement conversation.
