Pomo Restaurant Group is expanding its downtown Phoenix presence with the launch of SALTA, an Argentine-inspired steakhouse scheduled to open in late fall 2026 at 705 N. First St., Suite 100.
The restaurant will be located adjacent to Pomo Pizzeria Downtown and will focus on live-fire cooking rooted in the traditions of Argentine asado. Steaks, seafood, vegetables and shareable dishes will be prepared over wood and charcoal, according to a press release.
“With Pomo, we built trust by honoring the traditions behind the food. Salta carries that same respect into a completely new experience. The fire is visible, the flavors are honest, and the room is designed to bring people together. We want guests to feel the warmth of Argentine hospitality from the moment they arrive,” Stefano Fabbri, founder and chairman of Pomo Restaurant Group, said.
At the center of the restaurant will be a custom Argentine-style wood-fired parrilla and oven built in Spain and customized specifically for SALTA. The grill is designed to provide precise control of heat, smoke and char while serving as a focal point for both the kitchen and dining room.
Executive Chef Dylan Harper is developing the menu in collaboration with Argentine chef Carlos Alberto Lopez. While prime steaks and other live-fire specialties will anchor the concept, the menu also will feature handmade empanadas, wood-fired provoleta, milanesa, seafood, house-made pasta, salads, vegetables and shareable plates.
The restaurant takes its name from the northwestern Argentine province of Salta and its capital city, a region known for its culinary traditions and culture centered on gathering around food. Pomo Restaurant Group said those influences will help shape both the menu and dining experience.
A bar with more than 25 seats will connect the dining room and patio, creating an indoor-outdoor atmosphere. The beverage program will feature cocktails designed to complement the menu’s wood-fired flavors, while happy hour offerings and small plates will provide additional dining options.
The patio will include booth seating, while the interior dining room will emphasize intimate and comfortable seating arrangements. Counter-height seating between the bar and parrilla will offer guests a view of the open kitchen and live-fire cooking.
Additional opening details are expected to be announced before SALTA debuts later this fall.
