PEG Companies and The Wayfaring Group announce Cielito rooftop bar and restaurant in Old Town Scottsdale

In partnership with The Wayfaring Group, PEG Companies announced its latest concept: Cielito, a rooftop bar and restaurant celebrating the flavors and spirit of Northwest Mexico.

Opening in February 2026 atop the new AC Hotel Scottsdale Old Town, Cielito will introduce a rooftop dining experience in the heart of Old Town, according to a press release.

TWG, an ethnic research and design consultancy, developed Cielito from the ground up. Led by anthropologist and concept strategist Alex Webb and award-winning chef and creative director Shon Foster, TWG created a concept rooted in cultural research and culinary direction. Every element of Cielito, including menu and mood, reflects an authentic understanding of the region.

Envisioned as a day-to-night gathering place for hotel guests and locals, Cielito will pair approachable cuisine with a cocktail program and views of Camelback Mountain and the Scottsdale skyline.

The indoor-outdoor setting will feature sunset-forward seating and a lively pool-deck energy.

Chef Foster developed Cielito’s menu around coastal and highland flavors of Northwest Mexico, emphasizing shareable plates, bright ingredients and bold contrasts.

Chef Foster previously served as food and beverage director and executive chef at Amangiri, a boutique resort in Utah.
Webb designed the cocktail program to complement the menu and rooftop setting, highlighting agave spirits, citrus and seasonal ingredients.

“Cielito is meant to feel like a little escape above the city, sun-washed, coastal and effortlessly social,” said Mr. Webb. “We wanted guests to step off the elevator and instantly feel the warmth of Northwest Mexico, with a rooftop energy that moves naturally from laid-back afternoons to electric nights.”

Cielito will span 3,100 square feet with approximately 70 seats, including a 14-seat bar and pool-deck seating. The space was designed by Jules Sinson of EDGIED and features natural textures, warm tones and artwork inspired by desert skylines and Mexican folk art.

Cielito is on the rooftop of the AC Hotel Scottsdale Old Town at 7117 E. 3rd Ave. in Scottsdale.
